House-made pheasant sausage, fresh herbs and roasted peppers melange wrapped in crispy phyllo dough and served on a deep bone marrow gravy with smoked green peppercorn crema.
Soup
Lobster Bisque
A beautifully smooth, rich and creamy soup accented with fennel and a touch of cognac, finished with buttery, succulent lobster meat.

Halibut
Fresh Alaskan halibut char-grilled and basted with shallot butter, finished with a silky lemony hollandaise sauce and served on fresh wilted spinach with Wisconsin long grain wild rice.
Beef Tenderloin En Croûte
Roasted beef tenderloin wrapped in puff pastry with a truffle butter and mushroom confit, finished with bordelaise sauce and caramelized leek bearnaise sauce. Served with purple smashed potatoes and fresh broccolini.
Chicken Napoli
Boneless, skinless, free-range breast of chicken pan-sautéed with red onion, shallots, garlic, mushrooms and prosciutto, then flamed with marsala wine. Finished with cream and roasted with gruyere and mozzarella cheese. Served with smoked red pepper fregola and grilled asparagus.
Dessert
Caramel almond tuile shell filled with bittersweet chocolate mousse and whipped cream peaks, fresh raspberries, triple sauce painting and fresh mint.
